Mix paprika, black pepper, cumin, coriander, loomi, sumac, cinnamon, cloves, nutmeg, green cardamom, and black cardamom together to make baharat spice mixture. Set baharat blend aside.

Combine cilantro, 2 tablespoons olive oil, and lemon juice in a resealable plastic bag. Add 1 tablespoon baharat blend. Add chicken pieces, seal, and shake. Marinate in the refrigerator at least 4 hours.

Meanwhile, place rice in a large bowl and cover with fresh water. Soak at least 1 hour. Rinse and drain and return to the bowl. Add cashews, almonds, raising, and pistachios. Stir in 1 tablespoon baharat blend. Mix well and set aside.

Preheat the oven to 375 degrees F (190 degrees C).

Heat 2 teaspoons olive oil in a Dutch oven or tagine over medium heat. Add shallot and cook until translucent, 1 to 3 minutes. Turn off heat. Add rice mixture and toss to coat.

Remove cilantro from the bag with the chicken. Pour marinated chicken on top of the rice in the Dutch oven reserve bag. Pour broth into the bag and shake gently pour over the chicken and rice. Cover Dutch oven.

Bake in the preheated oven until rice is soft and chicken is no longer pink in the center and the juices run clear, about 75 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Spices to make a Baharat spice blend

There is no specific or traditional recipe for making a Baharat spice blend. I did a lot of research online to try to find a real traditional blend, or at least more information about it but frankly I couldn’t find anything that wasn’t conflicting.

Ultimately, everyone has his own blend, and it varies enormously depending on the country, the available spices and mostly the cook who created the recipe.

So for my recipe, I created my own mix by tasting different variations of it over the course of an afternoon. In the end, I liked the one I made, but my taste buds couldn’t take more.

However, that doesn’t mean you will like that exact blend, so here is a list of all the spices that are commonly used to make Baharat according to Wikipedia if you wish to modify it. These are the usual whole spices, but you can use their ground counterpart like I did.

  • Allspice
  • Black peppercorns
  • Cardamom seeds
  • Cinnamon (Cassia)
  • Cloves
  • Coriander seeds
  • Cumin seeds
  • Nutmeg
  • Turmeric
  • Saffron
  • Ginger
  • Paprika


What You’ll Need

If you already have the following spices in powdered/ground form, you’ll be able to whip up this Middle Eastern spice mix in just a few minutes. If not, you can easily grind whole spices in a spice grinder OR use a mortar and pestle .

Baharat spice is a traditional seasoning used in Middle Eastern cuisine. Make it at home to add its bold flavor to your favorite recipes.

What is baharat spice blend?

This blend is a combination of warm and earthy spices that add a sweet, smoky flavor with just a bit of heat.

Just as garam masala is a staple in Indian cuisine, baharat is used in many Middle Eastern dishes. The ingredients can vary depending on the region, but every blend has the same basic ingredients.

Another common blend of spices, ras el hanout has several additional ingredients that make it more fragrant and slightly sweeter in flavor.

And although za’atar comes from the same general region, it has a completely different base of ingredients. The flavors are nuttier and tangy, and it is most often found in dips or breads.

INGREDIENT NOTES AND SUBSTITUTIONS

Note: This is just a partial list of ingredients. For the full ingredient list, see the recipe card at the bottom of this post.

  • Cinnamon sticks - I like to use whole sticks rather than ground cinnamon. Toasting the sticks first brings out more of the warm spicy flavor.
  • Sumac - Made from ground sumac berries, this spice has a tangy lemon flavor, but without the full tartness of actual lemon juice. It’s slowly becoming more common in the United States, but you may need to visit a Middle Eastern market to find it.
  • Ground sweet paprika - While all paprika is made from dried red peppers, the different varieties available can create sweet, hot, or smoked paprika. Regular paprika is the sweet variety, so you should already have some on hand.

It’s simple to make homemade spice blends, and this baharat recipe is no different. Just toast the whole spices, then grind them and combine them together!

INSTRUCTIONS

  1. Toast whole spices: Place the cinnamon sticks, peppercorns, cumin, and coriander seeds in a dry skillet and heat until fragrant. Stir or shake the pan occasionally to prevent them from burning.
  2. Grind and cool: Allow the spices to cool slightly before grinding into a powder, then set aside to cool completely.
  3. Mix and store: Next, combine the remaining spices in a bowl. Once cooled, mix in the toasted spices until well incorporated. Spoon into a glass jar with a lid.

Uses for the spice blend

You can often find a bowl of this on Middle Eastern tables, just as we keep salt and pepper on ours here in the U.S.

I like to use it as a dry rub for grilled chicken or steak, or to add flavor to hard boiled eggs. There are plenty of other ways to incorporate it into your cooking, too.

  • In soups and tagines
  • Rubbed on fish or vegetables
  • Sprinkled over rice dishes

  • On flatbread with oil

Recipe notes

  • Storage - Store the blend in a sealed jar in the pantry for up to 3 months. It’s still safe to use beyond that, but it won’t be as potent.
  • Making larger batches - This baharat recipe makes enough to use it occasionally before the flavor starts to diminish. If you’ll be using it frequently, you can easily double or triple the amounts to make a larger amount.
  • Variations - In Turkey, dried mint is often added to the blend, while dried rosebuds are a popular addition in North African countries.

Health benefits - Surprisingly, most of the ingredients in this spice blend contain antioxidants and anti-inflammatory properties. Cinnamon and paprika are also high in Vitamin A, which supports bone health and a healthy immune system.

Make a big batch of homemade shawarma seasoning and use it to season all sorts of stuff like chicken, beef, and roasted chickpeas! It tastes just like the store bought shawarma seasoning but way better!

Shawarma seasoning that will make your heart sing!

This one has been a long time coming. Not only are the two of us big shawarma fans, we’re also picky shawarma eaters. That means just any old thing won’t do. It has to be the best. So it took some tinkering on my part when I set out to make the best homemade shawarma seasoning. And friends, it’s here! This is seriously amazing stuff.

What I love most about homemade seasonings is that you’re in the drivers seat, you have full control. And that control comes into play most when it comes to the amount of sodium in your seasonings. Stating the obvious here but store-bought seasonings are loaded with salt and/or sugar. But not our homemade version.

I’ve modeled this shawarma seasoning off of one that we absolutely love and I have to say, it’s pretty close to perfect!

Homemade shawarma seasoning in large batches isn’t difficult to make. You just grab fresh spices, combine them in a bowl and that’s it. With this recipe you’ll make enough seasoning for 21-23 lbs of meat. So it’ll certainly last you a while if you make the entire batch. Which, we go through easily in about 6 months. Have I mentioned we love shawrmas, because now would probably be a good time to do so.

Sometimes i’ll make a batch and split it with my mom and sis. I’ve mentioned this before but the little sister lives away from home and isn’t big on cooking. She’s always looking for easy things to meal prep so i’ll pass along homemade seasonings like this so she can meal prep stuff for the week. This shawarma seasoning is perfect to marinate chicken with. Just grill it up outdoors or on a grill pan and serve it with a big shirazi or greek salad and voila! Lunch in a flash.

I know it may seem like a lot of individual spices but if you’re passionate about your shawarmas, this is definitely a must try!

One last thing – when you want to prep the shawarma meat, combine 1 tablespoon of this seasoning with 2 tablespoons of olive oil and 1 tablespoon of white vinegar and a little salt and let the chicken marinade for 10-20 minutes. For beef shawarmas like this bowl, let marinate for 1 hour or up to 24 hours. The flavors just really absorb right into the steak and it’s melt-in-your-mouth good.


The Recipe

There are probably as many recipes for Baharat as there are families in Lebanon. Additionally, there are many regional varieties throughout the Middle East. The basic recipe calls for seven spices:

I have added cardamom and allspice to my Lebanese version. However, some Lebanese cooks add fenugreek as well. The beauty of blending your own spices is that you can play with the flavors until you arrive at the blend you like best. This is my family’s favorite. Bon appétit!


Stir together yogurt, mint and salt to taste. Refrigerate until ready to serve.

Combine lamb, onion, breadcrumbs, garlic, Baharat Spice Blend and 3/4 teaspoon salt, and mix thoroughly using hands. Divide mixture into 6 equal portions, and form each into oval patty about 5 inches long.

Preheat grill or grill pan to high heat. Grill burgers over direct heat, 4 to 5 minutes per side. Transfer burgers to plate, and place pitas on grill over indirect heat (or reduce heat under grill pan to medium-high). Let pitas warm and char very slightly, but remove before they turn crispy.

To assemble burgers, slice off about 1-1/2 inches from top of each pita bread, and spread insides of pocket with yogurt sauce. Slide tomato slice, a few cucumber slices and some cilantro leaves into pita bread, and add lamb patty.
