Progresso Breadcrumbs

tablespoon minced fresh ginger

cup Progresso™ bread crumbs

tablespoons neutral oil

tablespoon red curry paste

1

tablespoon tomato sauce

can (15 oz.) coconut milk

    In a medium bowl, add ground beef, ginger, garlic, eggs and breadcrumbs. Season with a pinch of salt and pepper and use your hands to gently mix meat mixture.

    When the mixture is completely mixed, make about 30 small, tablespoon-sized meatballs.

    In a large skillet over medium heat, drizzle in the neutral oil and add meatballs. Brown them well on all sides, cooking for 6-7 minutes.

    Remove meatballs from the skillet and add curry paste, tomato paste, and beef stock. Stir together and let cook for a minute. Then add coconut milk and bring to a simmer. Stir sauce and simmer for 3-4 minutes until it starts to thicken. Taste sauce and season with salt and pepper to taste.

    Add meatballs back to the sauce and simmer for 4-5 minutes. The sauce should be very thick.

    Serve meatballs with toothpicks or over rice. Garnish with fresh slivered basil.

Expert Tips

  • For a slightly lighter version, use light coconut milk.
