HOME BREAD

I have been making homemade bread quite often lately and I almost miss the fresh smell of bread when I don't have enough time and I have to buy some hot buns.

A friend scolded me for not posting a seed bread (which she tasted) that I made a few days ago, but it was so good that I didn't even get to photograph it…

Below you will find an equally successful and tasty bread recipe with a bread crust "on the hearth" that you can try without fail and maybe in the oven of the home stove.

ingredients:

  • 600 gr. White flour
  • 300 ml. warm water
  • 10 gr. salt (1 tablespoon)
  • 5 gr. sugar (1 teaspoon)
  • 20 gr. milk powder (2 tablespoons)
  • 7 gr. dry yeast (1 sachet)
  • 1 or
  • 50 gr. butter

Dissolve the yeast with the sugar in a little warm water and set it aside for a few minutes until it starts to activate.

Sift the flour into a fairly large bowl, sprinkle the salt on the edge so that it does not come into direct contact with the yeast that I pour in the middle then add the egg, soft butter and powdered milk.

I start mixing with one hand and with the other pour a little of the warm water until I get a soft crust that I knead for at least 15 minutes.

I cover it with a towel and leave it to rise over the stove with the oven on ready for baking. At the same time it will maintain a fairly favorable temperature in the kitchen for my dough to grow nicely.

After about an hour I turn the leavened crust on the counter, knead it for a few more minutes and shape a longer bagel that I sprinkle with flour.

I line a tray with a drop of olive oil and flour, then place the bread on the diagonal and let it rest for about 15-20 minutes.

I set a high temperature of 220 ° for the beginning and because I don't have a ventilated oven, I put another tray under the grill in which I add a very cold cup of water. This will create a humid atmosphere inside the oven and allow the bread to grow before forming the long-awaited crust.

I don't go to the oven at all for the first 20-25 minutes, then the temperature drops to 180 ° and I wait impatiently for another 20 minutes until I notice the color I want.

I can barely refrain from breaking the wonderful corner, but I have to wrap it in a few towels and let it cool down a bit.

I have been making homemade bread quite often lately and I almost miss the fresh smell of bread when I don't have enough time and I have to buy some hot buns.

Below you will find an equally successful and tasty bread recipe with a bread crust "on the hearth" that you can try without fail and maybe in the oven of the home stove.

I weighed the ingredients: flour, milk and water mix, yeast, oil, salt and sugar. I also prepared black and white sesame seeds. They are not only "design" but also for their special flavor.

How to make Turkish fluffy pita dough?

I put the milk water mixture directly into the robot bowl, added the sugar and mixed with a teaspoon. On top I put the yeast (dry) and a handful of flour (from the one already weighed). I waited 10 minutes for the yeast to activate. I filled it with the rest of the flour and salt and started mixing with the robot equipped with the dough hook. After about 2 minutes I poured the oil and continued kneading for another 5 minutes. I got a soft dough that can be detached with a spatula from the bowl.

I turned the dough into a bowl greased with a little oil and gave it a sphere shape (with oiled palms). I covered it with plastic wrap and left it to rise until it doubled in volume (it took me about 50 minutes). The fermentation depends on the ambient temperature.

After leavening, I lightly greased the worktop with a little oil and turned the dough over. It is soft and full of gas bubbles. I flattened it with my hands and brought its corners to the center like a sack.

I turned the dough with a smooth face towards me and pulled the dough a little on the table with my palms to tension it a little. I shaped it into a sphere and placed it on the tray (33 x 42 cm) covered with baking paper. I covered it with a clean towel and let it relax for 15 minutes.

After this time, I lightly greased my palms with oil and flattened the dough directly on the baking paper until I obtained a disc of approx. 30 cm in diameter (as much as the width of the tray allowed me). I covered it again with a clean towel and left it to rise for another 15 minutes. It can be seen that it has increased in thickness. I beat an egg with a pinch of salt and a tablespoon of milk and greased this Turkish bread with it (with the brush).

I set the oven to 180 C (heat up + down + ventilation) and the middle to high stage for gas.

How to make the model with diamonds or "quilted duvet" type?

The specific model of this Turkish bread is the "quilted" with rhombuses. This is done very simply by pressing with your fingers held together. He presses firmly, not just in shape. The fingers (forefinger, middle and ring) are held together, pressed with them and raised immediately then passed on. First I created the wide border of approx. 3-4 cm.

Then I made lines diagonally (about 4 cm away from each other).

I turned the tray and created other lines diagonally so as to obtain the characteristic diamonds. I sprinkled this Turkish bread with black and white sesame seeds.

Ingredient:

500g flour
1 sachet of dry yeast
240ml warm milk
50ml melted butter
1 tablespoon salt
1 teaspoon old cough

1 egg yolk and 30ml water for bread

Method of preparation:
I prepared the bread dough in the bread machine. I put the ingredients in the bowl in the following order: warm milk, melted butter in the microwave (but let it reach a reasonable temperature, do not put it hot), sachet of dry yeast, caster sugar, flour and a pinch of salt . I left the dough to knead and leaven in the bread machine for 2 hours.
If you don't have a bread machine, knead the dough by hand. Put the flour in a bowl, add the caster sugar, dry yeast, melted butter, warm milk and salt and start kneading the dough for 20-30 minutes until you get an elastic dough that does not stick to your hand. Cover the dough obtained with a clean towel and leave it to rise for 2 hours, in a warm place.

After 2 hours, the dough has risen nicely, we turn it over on the work surface and divide it into three equal balls.


We spread each ball in a rectangular sheet, which we then roll along.


With all 3 dough balls we do the same, in the end resulting in 3 rolls.

These 3 rolls, we start to weave them, we join them at one end, so that the end of the middle roll comes above the other 2 rolls (as in the photo below).

After joining the rolls at one end, we weave, as tightly as we can, all the way. We try to squeeze the ends of the braid lightly and put them underneath.


We put the braided bread in a tray lined with baking paper and leave it to rise covered with a towel, in a warm place.

After 1 hour, the bread grew very nice.


Meanwhile, in a bowl we put a raw yolk and 30 ml of water, we beat them with a small fork or a fork.


With this resulting composition we will grease the leavened bread, before putting it in the oven.

Sprinkle sesame seeds on top, we can sprinkle poppy seeds or flax seeds, sunflower, then put the bread in the preheated oven and bake for 30 minutes, until nicely browned.


After removing the bread from the oven, leave it in the pan for 5 minutes, then take it out on a wire rack or chopper and leave it to cool. It is a delicious homemade bread.
